Big Media brings "Welcome to Wonder Land" and "The All About Nothing" Podcasts to HCD

Owners Craig and Meredith spent a fun Sunday in front of the camera discussing family history, the story behind the distillery's start, and distilling award winning spirits with local podcasters turned HCD fans, Amii Bland and Barrett Gruber.

Amii, who has been a Hollow Creek customer for the past year, convinced Barrett that a visit to the distillery would make for excellent content for their respective podcasts. Amii's "Welcome to Wonder Land" podcast explores various topics and occasionally dives into intriguing rabbit holes. Barrett's "The All About Nothing Podcast" is a weekly conversation covering everything from news and politics to sports and entertainment, music to movies, and even presidents to coroners—and in our case, distilling bourbon!

Connecting over common interests has been a way of life for a good long time, about as long as whiskey has been distilled! We recently were introduced to Drew Hannush, the voice behind the Whiskey Lore podcast. With more than 300 distillery visits worldwide, Drew enjoys exploring, questioning and sharing the myths and legends of whiskey’s history, while reshaping how the world understands and appreciates its past.

Drew traveled to Leesville to taste, tour and interview Owners Craig and Meredith Amick. The result is an engaging dive into the spirit of Hollow Creek and award winning spirits produced on the shores of Lake Murray.

HCD Veteran’s Barrel Pick supports

Big Red Barn Retreat

Barbara Irons, co-founder of the Big Red Barn Retreat in Winnsboro, SC receives a donation check from Meredith and Craig Amick.

This past November we honored Veteran’s Day with a special release of our William Alan Battlefield Bourbon, a hand-picked single barrel bourbon, chosen in an exclusive tasting. The Veteran barrel pick stemmed from a visit with Matt & Gus of Whiskey & Whitetails along a few invited Veterans.

The release gave us the opportunity to welcome bourbon loving veterans from across the state to our distillery. For some, it was a first time visit, for others a return for favored spirits. For our Hollow Creek team it was a chance to thank those who served along with those who continue to serve, in addition to raising funds for the Big Red Barn Retreat (BRBR).

Founded in 2014, BRBR began with offering services to help veterans and first responders who are struggling with PTSD and transitioning out of the military. Through a variety of programs, the staff at BRBR provide heroes with transformative programs, training, and services, so they become the best version of themselves.

Today we had the opportunity to visit BRBR, touring the lodge and learning of all the programs and services they provide. We even had the chance to meet Barbara Irons, whose husband was the inspiration for the facility, and presented her with a check from the proceeds of our special release bourbon.

If you know us, you know we live by, “Faith, Family and Hard Work”, and a big part of our faith is service. This donation is given with heartfelt gratitude and respect for all who serve.

It's that wonderful time of year-

Cocktail Season!

From Thanksgiving through to New Year's Day, also known as National Bloody Mary Day, the cocktail season is in full swing1 sometimes, the popular crowd and rescheduled parties carry well into January.

For our team at HCD, it's an opportunity to put on our mixology aprons and stir up something unique and with our variety of Family Reserve releases, we've had a lot of fun creating our annual "12 Drinks of Christmas".

Donation to Water Mission helps Hurricane Recovery

HCD & Community respond to disaster recovery

As we closed the distillery on Thursday evening, September 26th, we anticipated the day ahead with a full production schedule and plans for our first double release on Saturday. Little did we know that Hurricane Helene was going to change our plans.

After spending hours cutting the large tree that blocked our driveway, we were able to head to the Distillery to check on the property. It was the longest 3 mile drive in our history!

We were relieved to find our buildings were unscathed, but our neighbors and our region had been affected, and the damage further north was even greater. In the days that followed, we determined our blessing needed to translate to assistance for others.

Our planned double release became a triple release two weeks after the storm as well as an opportunity to help others. With careful consideration and an understanding of the critical need for clean water, we decided our triple release day would become a benefit for Water Mission’s Hurricane Relief. The day's releases included 3 products from our Family Reserve line including our new Honey Whiskey, along with two popular flavors, Blood Orange Vodka and Blackberry Whiskey.

While some folks in our area were still reeling from the effects of the storm, the outpouring of support was steady throughout the day. With support from our dedicated customers we were able to donate $1500 to aid Water Mission in supplying clean water to our neighbors in Western North Carolina.

Our continued prayers go out to all those who have suffered damage from the storms.

HCD launches Special Edition to benefit The Big Red Barn Retreat

What started as a friendly introduction to a couple of bourbon-loving, outdoorsmen with true patriotic spirit, has come full circle from a pretty cool idea to an awesome awareness/fundraising campaign in support of our greatest warriors.

When we first met Matt & Gus of Whiskey & Whitetails, we enjoyed similar enthusiasm for the outdoors, bourbon and the great American spirit. As we talked, we learned of Matt’s military service and his passion for supporting his fellow Veterans. It was then the idea for a special release was born, a barrel picked by Veterans with a portion of the proceeds supporting a local veterans charity.

With a name that reflects the grit and brotherhood forged in service, we are proud to present our Veteran’s Day Special Edition William Alan Battlefield Bourbon. Strong and bold, this whiskey honors the courage, resilience, and strength of all our military veterans.

With this whiskey, we recognize that for many of our veterans and their families, the battle does not end once their service does. We are proud to share our support of our country's servicemen and women by donating 20% of the proceeds from each bottle to The Big Red Barn Retreat. The Big Red Barn Retreat is a haven for veterans and first responders, offering integrated programs for post-traumatic growth and well being.

This special edition will be released in limited quantities, and sold on a first come first served basis on Saturday, November 9th from our Leesville distillery.

A learning experience

It’s always a fun time when we get to meet experienced influencers who enjoy talking bourbon. This month we had the pleasure of hosting the guys from Whiskey & Whitetails, who visited recently for a barrel pick. The visit has led to a collaboration for a special Veteran’s Day release as well as recording an episode of their podcast.

Matt & Gus have been lifetime friends and began their quest to educate, share and influence the time-honored traditions that come from their love of whiskey, hunting and all things outdoors. As certified executive bourbon stewards, they’ve grown their business curating whiskey tastings, hosting classes, advising restaurants and venues, as well as recording their entertaining and enlightening podcasts.

HCD Distillery Dog Day

was a huge Success

This weekend we joined forces with Final Victory Animal Rescue (FVAR) to raise awareness and collect donations for the West Columbia non profit. Our Distillery Dog Day brought hundreds of visitors out to Leesville, some who visit regularly and some who visited for the very first time, all with the common goal of helping the animals.

The day began with the tasting of a new special release to commemorate the day, Tail Waggin’ Caramel Whiskey and a goal to collect a ton of food. Throughout the day visitors were able to learn about the Final Victory Animal Rescue services, including rescue, adoption, fostering, volunteering and even their “Doggie Day Out” program. Visitors also had the chance to shop new High Cotton Bourbon merchandise, including t-shirts, Glencairn glasses, and our very first dog toy, from which all profits went to FVAR.

All in all, the day produced more than 3400 lbs of dog and cat food, $2100 in online and cash donations, all kinds of needed pet gear. Best of all several applications for adoptions were collected, and a beloved foster named “Bacon” got a home.

Thanks to all who supported our efforts. The day was paws-itively amazing!

Please Feed the Animals!

Our fur friends need your help!

We're teaming up with Final Victory Animal Rescue (FVAR) to host an awareness and fundraising day here at the distillery. “Distillery Dog Day” is set for Saturday, September 7th , from 11:00am to 2:00pm. The day's event will showcase the many services of FVAR along with a food and supply collection.

We've set a hefty goal and are looking for your help as we collect "A TON" of food! Visitors are encouraged to come out and support the event by bringing food for adult dogs and cats, as well as puppies and kittens. All food types and sizes will be accepted. Donations of canned chicken, canned tuna in water, and canned pure pumpkin will also be accepted for animals with special dietary needs.

Final Victory Animal Rescue is located in West Columbia, SC, with rescued cats and dogs residing at the facility and in foster homes. They are a nonprofit organization on a mission to give cats and dogs a positive experience after a traumatic time in the shelter, neglected homes, or living on the streets. FVAR provides pets final victories by helping them find safe, loving homes in South Carolina and across the entire East Coast.

As part of our efforts to support the event, we will donate all profits from our very first branded dog toy to FVAR. As a salute to the SC Boykin Spaniel and National Boykin Spaniel Day, which is celebrated on September 1st annually, we chose to create a squeak toy in the likeness of our High Cotton Bourbon bottle as its a fun piece to our growing merchandising line.

Among the vendors on hand will be Melt of Lexington for lunch and snacks, The Busted Biscuit selling spirited baked goods, and Heritage Canning with pickles, jellies, jams and more.

We're celebrating 5 years of White Hot Cinnamon Whiskey

We’ve all heard the old adage about how quickly time flies when you’re having fun. It’s no different for us here at the Distillery. As we head into the second week of August, we’re marking the 5th anniversary of our White Hot Cinnamon Whiskey.

For those who’ve been here a time or three, you may recall our White Hot is made from 3 simple ingredients: corn whiskey, cinnamon oil and cane sugar. That’s it. It was important to us to create a product that is full of flavor, using simple, natural ingredients to offer something better to the cinnamon whiskey market. In fact, our recipe was so good it drew the attention of another brand- but that’s a story we’ll tell some other time.

To celebrate the 5th birthday, we’re doing a mini giveaway, and by “mini” we mean our 100ml White Hot mini. Every 750ml bottle purchased on Saturday, August 10th, of any Hollow Creek spirit, will receive a FREE White Hot Cinnamon Whiskey mini*. Fruit flavor Vodkas bring big flavor to Summer drinks

A lot goes into our Family Reserve releases. In fact, we start planning almost a year in advance for some of our products. It’s not just about what will suit our fancy, it’s about knowing the market, looking at trends and sourcing the best ingredients for products we produce.

As we planned for Summer, the trend for lighter cocktail recipes made with unique flavors was the driving factor for two of our Family Reserve releases. Coming off the successful release and increasing demand of our Low Water Chocolate Espresso Vodka, we set our sights on going fruit forward. June saw the release of our Peach Mint Vodka, with a great nose and the subtle flavors of peach and mint, it was a hit with peach lovers.

Next up was our July release. Now whether it was the carryover of 4 ^th of July holiday high, or the desire to find something tasty, or maybe folks just came out for the lobster truck and decided to buy a few bottles - whatever it was our Blood Orange Vodka flew off the shelves and every last drop was sold in 4 hours!

High Cotton 105 Proof takes Best in Division

Lightning struck again… in a big way! While all of SC celebrated the USC Lady Gamecocks NCAA Women’s Basketball National Championship, Leesville’s Hollow Creek Distillery was scoring it’s own win! Master Distiller Craig Amick along with his wife Meredith, owners of the 10-year-old property, returned to the Los Angeles International Spirits Competition (LAISC) with two of their special release bourbons.

Now in its 18th year, LAISC is one of the major industry award programs drawing entries from around the world, and setting the standard for distilled beverages since 2007. With blind tastings conducted this March, Hollow Creek’s High Cotton 105 Proof Single Barrel Bourbon scored 94 points earning a gold medal.

High Cotton was also judged to be “Best in Class” and “Best of Division.” High Cotton 105 was the best bottle of bourbon at the competition… regardless of age!

More good news from LA

While our High Cotton 105 Bourbon seemed to be the all-around favorite for many of the judges, our William Alan 107 placed well in the Los Angeles International Spirits Competition (LAISC) too, winning a gold medal of its own.

An additional silver medal was awarded to William Alan 107 Proof for Best Execution in Package Design. Named for the family’s past and growing future, William Alan Bourbon and it’s dark, smokey flavor profile has proven to be a sound rival to more traditional flavor profile of High Cotton.

All three varieties of both High Cotton and William Alan are available at retail locations throughout SC. Be sure to ask for us by name.

Low Water Chocolate Espresso Vodka

In August 2023, HCD introduced its new Family Reserve Limited Release series. The idea was to share special, limited release spirits with the local market. These spirits are based on new production techniques, original recipes or spirit finishes. Each monthly release has been met with great anticipation often resulting in the limited releases being sold out within hours. Along the way we’ve found some strong fan favorites, including Low Water Chocolate Espresso Vodka.

Before the team completed production or released the first sip, let alone bottle, of Low Water Chocolate Espresso Vodka, distributors were calling asking when it would be put into distribution. That was the first indicator we had produced another great spirit. The quick sell out on release day was the second.

Much like the days of Covid, when we turned production from spirits to hand sanitizer almost overnight, we stepped up our game and had a product ready to go in record time. Its deep chocolatey color has a balanced flavor of both cocoa and coffee and makes some decadent cocktails.

Every Month!

Seems like we've been running full steam since we opened the doors - if we weren't laying the groundwork and setting up our business plan, we were trying new recipes and testing moonshine flavors. Right on to planning our expansion and releasing new spirits. From those new spirits came an idea to create a new special release series, of limited quantity, not normally available spirits, we're calling our "Family Reserve".

Each month there will be a new offering either by spirit type, flavor profile or experimental process of original recipe, short run spirits, available at the distillery only.

On Saturday, July 29th, we'll kick off the series with a spirit from the vault ~ the last spirit made with Lamar's seasoned touch. The brandy started with fresh local strawberries and has been aged perfectly to emerge as the premiere Family Reserve Strawberry Brandy. With very limited quantities, each bottle will be numbered with availability being first come, first serve. No holds, no call ins.

Celebrating Craig's 40th: Folks, fun & plenty of laughs

We kicked off the 4th of July weekend celebrating not only our great country's independence but our Master Distiller Craig Amick's 40th Birthday and what fun it was. Joining us was nationally recognized Comedian Dave Zasloff.

Zasloff had folks laughing out load as he joked about his sobering life experiences, personal growth journey and gift of love and family. An author and musician, he led the crowd in a "rousing" rendition of Happy Birthday and finished the night with a stress relieving audience participation exercise that had everyone giggling. SEE IT BELOW.

A HUGE THANK YOU to all who came out, supported the visiting food truck and enjoyed the show. We are blessed to do what we love and be surrounded by good company. Watch for more fun to come.

A Barrel Pick Party and you’re invited!

Ever wonder what goes into picking a bourbon barrel for release? Well, it’s not rocket science

but it sure is tasty.

For the first time Hollow Creek is releasing barrel proof High Cotton, and you can be a part of

the picking. Purchase tickets for our Barrel Pick Party, Saturday, June 10th . The evening starts at

7:30pm and up to 60 HCD friends will enjoy a sampling of 4 barrels of High Cotton, that are

ready for barreling. You’ll get to learn a bit about our bourbons, enjoy some like-minded

bourbon fans and a light charcuterie spread. Each participant will be given an unmarked poker

chip and after tasting a few samples, they can drop their chip in the basket for the barrel they

deemed worthy of bottling.

Double the fun!

Picking is just part of the fun. Join us for the bottling too.

We’ll host a smaller, more intimate group for the bottling of the “picked” barrel on Friday, June

16th from 7:30 to 9pm. The bottling experience allows bourbon fans to step up and take part in

the production. Folks will be able to bottle, label and seal the bourbon to be released the

following day. This small group will also reserve the first opportunity to purchase bottles from

this release.

Trifecta anyone?

Come on back on Saturday, June 17th when the barrel is officially released! It’s a great way to

share your bourbon experience with family and friends. Bring them out for a tasting and the

opportunity for them to purchase the limited quantity Single Barrel, Barrel Proof High Cotton

Bourbon. Tastings are free and it’s a fun way to start a Father’s Day weekend.

Another Successful Blood Drive

Thanks for helping save Lives

Every 8 weeks folks who give blood are eligible to do so. And since we hosted our first Blood Drive with the Blood Connection, our drives have continued to increase the number of donors.

The blood drive on February 18th resulted in an amazing turnout!!! According to Kenya Dandridge, Account Manager at The Blood Connection, the mobile unit was able to collect a total of 13 units, which translates to helping save the lives of up to 39 hospital patients.

When it comes to good taste, it's always a matter of personal opinion. In today's fast-paced world, new social mediums have the ability to put products in targeted spotlights with surgeon-like precision, creating new audiences and fans for almost any product.

A good example of influencer marketing is the recent blog post from UPROXX Lifestyle Writer Zach Johnston, in which he names one single whiskey for each of the 50 states, worthy of sampling.

Johnston's review of our Small Batch Bourbon likened the bouquet to a bowl of butter and brown sugared grits, while picking out flavors of Cherry Coke, ginger, pumpkin and cinnamon, creating a tempting palate worthy of exploring.

William Alan Bourbon Caramel Sauce

Dessert just got a little tastier!

October 14th is National Dessert Day, so go ahead an indulge a bit. Check out one of our favorite recipes featuring our William Alan Bourbon. This tempting, Bourbon Caramel sauce is the perfect drizzle for any dessert. Try it over chocolate cake, a warm apple turnover, savory bread pudding or rich creamy vanilla ice cream!

William Alan Bourbon Caramel Sauce

Ingredients:

1/2 cup granulated sugar
1/2 cup packed dark brown sugar
6 tablespoons butter
1/2 cup heavy whipping cream
1 teaspoon fine sea salt
2.5 tablespoons William Alan Bourbon

In a medium-sized heavy saucepan cook sugars over medium heat, stirring occasionally, until sugars start to bubble. Roughly 5-6 minutes.

Remove from heat, whisk in butter and return to heat. Cook, whisking constantly until contents starts to boil, about 1 minute.

Carefully whisk in heavy whipping cream. Cook, stirring constantly, until mixture is well combined and boiling, about 1 minute.

Remove saucepan from heat; whisk in sea salt and William Alan Bourbon. Cool 5 minutes before serving. Enjoy!

HCD Announces Collaboration

October brings first of two special releases, High Cotton bourbon aged in a cabernet sauvignon barrel.

(Leesville, SC, October 3, 2022) – With a portfolio of award-winning spirits, Master Distiller and Owner of Hollow Creek Distillery, Craig Amick set his sights on crafting his first special release bourbon. After researching options, he settled on an idea for which he was certain his wife Meredith would support. Amick enlisted his wife to visit Pelzer’s City Scape Winery for a tasting and to secure a well-seasoned barrel. The visit proved fruitful, as Meredith secured an arrangement to return for a freshly emptied barrel.

Now 6 months after the visit, Hollow Creek is set to release their special edition High Cotton Bourbon Barrel Reserve on Saturday October 15 ^th . One of two award-winning bourbons produced at the family-owned distillery, High Cotton is a Straight Bourbon Whiskey with a traditional high rye grain bill. Having been aged in charred oak, the bourbon was transferred to the City Scape barrel for finishing.

The wine barrel was previously used to age City Scape’s Winemaker’s Reserve Cabernet Sauvignon. The full-bodied wine holds flavor notes that include black pepper, pomegranates, dried cherries and vanilla with a dry finish. The marriage of these two South Carolina products is truly a one-of-a-kind treat.

Driven by faith, family and hard work, the Amick ‘s continue to build on their offerings with plans for a second special release bourbon to come in mid-November as well as a line-up of events through the end of the year.

HCD named SC Distillery of the Year by New York Int'l Spirits Competition and earns Double Gold for William Alan Straight Bourbon.

(Leesville, SC, June 6, 2022) – Following an impressive win of 10 medals in April, Hollow Creek Distillery has been awarded Double Gold for William Alan Straight Bourbon Whiskey and the title South Carolina Distillery of the Year in the 13 ^th Annual New York International Spirits Competition (NYISC).

Master Distiller Craig Amick along with his wife Meredith, owners of the 10-year-old property, started the business distilling and bottling moonshine. Through the years they added White Hot Cinnamon Whiskey, High Cotton Bourbon, Low Water Vodka and William Alan Small Batch Bourbon, all distilled and bottled in the Hollow Creek area of Leesville.

This year the NYISC had over 1400+ spirits from 39 countries and 34 States in the USA entered. Top spirits buyers judged the products by category and price in blind tastings.

Additionally, White Hot Cinnamon Whisky and Low Water Vodka were awarded Bronze medals.

“Looking down the list of winners, we are thrilled to be among some pretty prominent brands, nationally and internationally.” stated Mr. Amick. “Our passion for creating quality spirits is what has been driving our business. Winning these awards is a huge accomplishment.”

In April, the pair announced Gold and Silver awards in the Los Angeles International and San Francisco World Spirits Competition for White Hot, Low Water, William Alan and High Cotton. The latter two were also awarded Gold medals for packaging design for a total of 10 medals.

With a new 5,000 sf production building running an 800-gallon pot still, Hollow Creek is adding more hours to their production to meet demands. The tasting room offers free tastings of their full line of spirits Thursdays through Saturday. l

HCD earns Ten Total Medals in Two Major Spirits Competitions

(Leesville, SC, April 2022) – It’s a season of wins for SC- first the USC Lady Gamecocks claim the NCAA Basketball tourney for the second time and now Leesville’s Hollow Creek Distillery has been awarded a total of 10 medals in two major international spirits competitions.

Master Distiller Craig Amick along with his wife Meredith, owners of the 10-year-old property, entered four spirits into two prestigious competitions earlier this spring.

The first competition entered was the Los Angeles International Spirits Competition (LAISC), one of the major industry award programs setting the standard for distilled beverages since 2007.

Now in its 16th year, the LAISC drew entries from 19 countries awarding 102 Gold Medal Awards, 121 Silver Medal Awards, and 31 Bronze Medal Awards. Hollow Creek’s High Cotton Straight Bourbon and White Hot Cinnamon Flavored Whiskey both received gold medals, while William Alan Small Batch Bourbon and Low Water Vodka brought in Silver awards. Additionally, 34 gold medals were given for packaging design, of which HCD captured two for the packaging of High Cotton and William Alan.

“We are thrilled to have been recognized among our peers nationally and internationally. It’s amazing to us, that what started as a hobby business has led to international recognition” stated Mr. Amick. “It’s only natural for us to be biased about our product, if we didn’t think it was good, we wouldn’t have continued this adventure”.

Within minutes of learning of the LA wins, the owners received notice regarding their San Francisco submissions. Now in its 22nd year, the San Francisco World Spirits Competition was founded to recognize exceptional products in the spirits industry. For this year’s competition, 70 judges from all over the world evaluated 5,000 entries. HCD received another four medals including gold for Low Water Vodka and William Alan Small Batch Bourbon, as well as silver for White Hot Cinnamon Whiskey and High Cotton Straight Bourbon.

The distillery recently completed the expansion of a new 5,000 sf production building adding an 800-gallon pot still. Weekly free tastings of their full line of spirits are available Thursdays through Saturday. Along with the mentioned award-winning products, HCD also produces 34.08 Wheated Whiskey, their original moonshine called Copper Parrot and seven flavored moonshines including the popular Sea Salt and Caramel, seasonal Fall/Winter flavors Pumpkin Pie and Peppermint, Spring/Summer favorites Peach and Watermelon, plus Apple Pie, Carolina Honey and Hell Fire. The latter two made using SC Certified local honey and reaper pepper.

'Tis the Season to Do Good for Others

(Leesville, SC, December 2021) – The holiday season is all about traditions and gifts. It’s also the time of year we are reminded of those in need. As the pandemic has taken its toll on so many in our region, Craig & Meredith Amick, founders of Hollow Creek Distillery decided they wanted one of their traditions to do more for their community.

This year, their annual Hot Chocolate Social will be more than a free cup of spirited cocoa. They’ve teamed up with The Blood Connection to host a blood drive. The drive will be held on Saturday, December 18th from 10am to 3pm, as part of the holiday gathering, that runs from 10 am to 7pm.

Visitors are encouraged to visit thebloodconnection.org to set up their appointment to donate. Once on the site, they can search for the drive by location (Hollow Creek Distillery), or by sponsor code (7467) and set their appointment online. They can also visit Hollow Creek‘s Facebook page to scan the QR Code from the Blood Drive event page. Simply hold your mobile phone over the code while your camera app is open. The camera reads the code and directs donors to the appointment page where they can select a convenient time to visit Leesville for their set appointment. Drop-ins will also be accommodated, and registered donors will receive a $20 eGift Card from The Blood Connection.

As part of the annual Hot Chocolate Social, visitors are welcome to try the spirits produced on site and enjoy a cup of cocoa dressed with their choice of Peppermint Moonshine, Sea Salt & Caramel Moonshine, White Hot Cinnamon Flavored Whiskey, High Cotton Bourbon or even Hell Fire, the moonshine made with Caroline Reaper Pepper- for a spicey take on Hot Chocolate.

Santa will be on hand from 10 am to 1pm to visit with children of all ages. Donating blood is a good way to secure your spot on his “Nice List” Stoney Creek Cigar will also be on site selling hand rolled cigars.

Local Distillery Introduces Recipe Cards to Promote Local Restaurants

Hollow Creek Distillery creates free marketing opportunity to help local restaurants reach new visitors after pandemic.

(Leesville, SC, July 2021) Expansion was always part of Hollow Creek Distillery’s goals, but when the pandemic took hold, Owner Craig Amick was cautiously aware of the potential impact the pandemic could bring. Fortunately, Amick’s small business was able to remain open and fully operational by pivoting into the production of hand sanitizer for SC State Government. That was the catalyst that pushed expansion to reality.

But while the Amick’s were hustling to supply hand sanitizer and stay ahead of their distilling, they were aware of the many businesses who were not as fortunate. As they prepared to launch new products, they decided they had to do it with a way to help their fellow small businesses in the food service industry, an area that continues to struggle.

According to the National Restaurant Associations, 2 out of every 3 restaurant employees lost their jobs, 110,000 eating and drinking establishments closed last year, some temporarily others for good and billions of revenue dollars have been lost across the US. As businesses return to full operating capacity they face new struggles, such as the shallow labor pool and increased wholesale prices.

“Knowing our local restaurants are struggling left us feeling concerned” stated Amick, “and we wanted to help in some way”. It was then that the idea of recipe cards came to mind.

Hollow Creek is offering to print an oversized recipe card for a restaurant, bar or club who is serving spirits from the Hollow Creek family in their facility. The cards are designed to showcase the supplied recipe with a full color photo along with the authoring business’ logo, business profile and contact information. The cards are produced and printed at no cost to the restaurant yet offer free promotion of their business. The cards are distributed to guests who visit the distillery, offering new ideas for ways to use the spirits.

Steve Price, Manager of Bistro on the Boulevard, in Irmo took advantage of the opportunity to showcase an original martini recipe. “We saw this as a way to support a local family owned small business as they grow and introduce new products. Things really seem to be happening over there so we were happy to get in early. The free marketing is a perk.”

Brittiney Moore, owner of 8th Wonder Cuisine, which offers private chef and bar services, also provided recipes to take advantage of growing her market. “We’re always pushing our creative culinary skills and love to share new ideas. We paired Low Water Vodka with Hell Fire Moonshine in our ‘Oh, Bloody Hell’ for a spicier take on a Bloody Caesar.”

The recipe card program is open to mid to upscale, full-service properties throughout the Columbia region, who are currently serving or are interested in serving Hollow Creek spirits. Interested business’ can email marketing@hollowcreekdistillery.com

“We’re seeing more visitors making our property their destination, having these recipe cards expose our product as well as adding visibility for area businesses” stated Meredith.

Local Distillery Announces Product Rebrand

Leesville’s Hollow Creek Distillery shares new look for High Cotton Bourbon

(Leesville, SC, June 2021) Nearly three years after the introduction of High Cotton Bourbon, Hollow Creek Distillery is showcasing a new look for their first bourbon.

As owners Craig and Meredith Amick continue to plan the growth of their distillery, they are excited to share the new look of one of their original distributed products. High Cotton launched in January 2019 with the idea of being an everyday bourbon. The original design idea was a collaboration between the Amick’s and a local customer who happened to be a Boykin Spaniel breeder. Boykins have been bred in SC, specifically for hunting since the early 1900’s. An avid outdoorsman, Amick realized the impact of having man’s best friend and loyal partner represented on a brand that would appeal to a sportsman.

The dog became symbolic of the young bourbon brand and fans would share both their love of Boykins and bourbon when they would visit the distillery, often touting photos of their pups. As production demands grew and new products were introduced to the Hollow Creek portfolio, a decision was made to elevate the packaging of existing products as well.

The new slim style bottles are used on the spirits Hollow Creek is producing for distribution. Currently, High Cotton and White Hot Cinnamon Flavored Whiskey are two of their spirts being distributed by Southern Glazers.

The new identity for High Cotton stays true to the Spaniel and adds a nod to the look of vintage label designs with an antiqued, torn edge paper label detailed with scroll work and stylized lettering. The new labeled bottles are available at the Distillery and will be flowing through wholesale distribution channels in the near future.

The rebrand launch of High Cotton Bourbon will be celebrated on Saturday, January 22nd, from 10 am to 7 pm. Visitors are welcome to stop on by to enjoy “Our Bourbon, Your Way” where guests of legal drinking age can indulge in a free bourbon cocktail served the way they like- neat, over ice, or with a cola, ginger ale or lemon-lime soda mixer.

Leesville’s Hollow Creek Distillery begins production of Vodka

(Leesville, SC, January 2021) – With the recent announcement of a new 5,000sf building and a Community Service Award from Governor Henry McMaster for production of hand sanitizer at the start of the pandemic, Hollow Creek Distillery is making news again.

Owners Craig and Meredith Amick have announced the addition of a new spirit product to their small batch distillery. The makers of Hollow Creek Moonshine, High Cotton Bourbon and White Hot Cinnamon Whiskey are venturing into new territory with the launch of Low Water© Vodka.

Low Water Vodka is a handcrafted, pot-distilled vodka produced from 100% corn at Hollow Creek Distillery in Leesville, SC.

The “Low Water” moniker is a nod to the family’s legacy in the Lake Murray community. Captain Tom Amick, great grandfather of Craig Amick, Hollow Creek Distillery’s President, is credited with having been a successful ferryman captaining a flatbottomed skiff across the upper region of the Saluda River prior to construction of Lake Murray. With the capability of transporting multiple carriages and livestock, Captain Tom earned a reputation as a dedicated community servant respected for his work ethic and generosity.

Production of Low Water vodka has begun in the original red barn property tucked beneath the pines on Rocky Ridge Road off Highway 378 in Leesville and will move to the new 5,000sf expansion once construction is completed.

Predominantly known as a mixer, traditional vodka is commonly distilled multiple times to produce a clean, transparent spirit. Utilizing pot distillation will allow Hollow Creek to handcraft a high quality vodka worthy of the pride taken in their entire product offering.The body content of your post goes here. Local Distillery Starts Expansion

Lexington County’s Hollow Creek Distillery begins 5,000sf expansion

(Leesville, SC, January 2021) – Hollow Creek Distillery stepped off the New Year with the announcement of an expansion to their family owned and operated distillery. The mild days of December saw ground clearing and the beginning phase of construction on a new 5,000 sf production building which will house a 800 gallon capacity still.

Hollow Creek opened its doors 6 years ago with the resurrection of locally distilled moonshine. Owners Craig and Meredith Amick are part of the Amick family legacy who have worked independently in the Lake Murray area for 9 generations.

As visitors crest the hill of Rocky Ridge Road, just off SC Highway 378 on the edge of Lexington County, they make the gentle turn into the slightly wooded grounds, where the bright red barn stands proudly marking a family heritage as deep as the lake itself.

With experience measured in generations, it was clear moonshine that would be the first building block of an ever-expanding product offering. Eight flavored varieties were introduced soon after and the process truly became a family operation when Meredith suggested the addition of “Sea Salt & Caramel”, one of their most popular year-round flavors. Seasonal moonshines are also produced with flavors including Watermelon and Peach, in Spring/Summer and Pumpkin Pie and Peppermint in Fall/Winter.

More recently, Hollow Creek has introduced White Hot Whiskey, an all-natural cinnamon whiskey with 1/3 less sugar than popular brands and High Cotton Bourbon, a well-balanced bourbon with a smooth finish and a worthy cause behind it.
